Easy Cheesy

We are big fans of cheese at our house, but usually recipes call for shredded cheese. I really dislike hand shredding cheese. I do sometimes use a food processor for the job, but because it's sometimes more of a pain to clean the processor after using it, I usually stick to hand grating. But recently I discovered a way to make cooking with cheese much easier. 

For my son's birthday, I made homemade pizza and let the kids top on the toppings. I spent a little extra to buy pre-shredded cheese, just to make life easier for myself - but I over bought. What was I going to do with a couple of extra bags of cheese? How I could I use them up before the cheese went bad?

I popped them in the freezer. 

I was skeptical this would work, because I'd always read cheese has texture issues after it's frozen, but I figured that was better than wasting the cheese. The next time a recipe called for shredded cheese, I removed one of the bags from the freezer and knocked it against the kitchen counter a few times. This loosened plenty of cheese for the recipe, and any clumps easily broke up in my hand. I returned the bag to the freezer and waited to see how the dish would taste. Happily, both the taste and texture were exactly as if I'd used freshly grated, non-frozen cheese. And for months I was able to skip cheese grating, which greatly streamlined my cooking routine.

 In fact, I liked it so much, I now buy a block of cheese and shred the whole thing in my food processor, then stick it in one or two large freezer bags. This is cheaper than buying pre-shredded cheese, but is also extremely convenient. Give it a try!

  1. I've been doing this for a long time. While my husband dislikes it (he doesn't like frozen cheese on tacos or whatever--I frequently forget until the last minute to take it out of the freezer!) I love the ease of it. I've never once had a problem with texture problems. And, I can get all my blocks of cheese shredded in minutes with my food processor, and then that task is done!

  2. Blocks of cheese certainly suffer from freezing, but shredded cheese is already broken up, so I don't notice much difference. I love having already shredded cheese ready to go.
